If participants in an international appliance design competition are right, our kitchens are about to help make us a lot healthier. The annual Electrolux Design Lab competition was established in 2003 to foster and promote the design of futuristic, innovative and ultra-functional appliances. For the 2006 competition, participants from around the world were asked to create food preparation and food preservation appliances that promote healthy eating habits. Many of the top entries demonstrate what might be possible in the kitchen of the future.

The Vege, for instance, is a refrigerator-size appliance in which homeowners can grow vegetables right in their own kitchens, all year long. Up to 40 plants can be grown in the Vege using hydroponics, a crop-production system that relies on mineral-nutrient solutions rather than soil as the growing medium. A digital display indicates the number of days until each row of plants can be harvested. Teeravit Hanharutaivan, the Thai student who designed the Vege, also notes that the appliance's enclosed cultivation zone reduces, if not eliminates, the risk of plant disease.

A similar entry, called the HydroSphere, is a large, transparent sphere in which homeowners can grow herbs, small fruits and vegetables right on their kitchen counters. The Hydro-Sphere, designed by Kleber Puchaski of the Royal College of Art in the United Kingdom, uses a solar panel to power a central growth lamp, which automatically adjusts to the right temperature and light levels for optimal plant growth.

The competition's third-place winner was a portable cooker called the Vessto, which uses heat from a stove to expand and contract small quantities of gas within the appliance. This, in turn, powers the Vessto so it can run independently, conserving energy. The second-place winner, called the Organic Cook, uses infrared technology and vacuum cooking so homeowners can grill, fry and boil foods without the use of oil.

The competition's first-place winner was an appliance called the Nevale, designed by Metin Kaplan, a student at the Istanbul Technical University in Turkey. Designed to encourage consumers to take fresh, healthy foods with them wherever they go, the mobile food carrier can store up to four hot or cold meals. It uses a vacuum system to keep food fresh until it's ready to be consumed, and can automatically reheat food at a preset time. So whether you're at home or on the go, you can always eat healthier meals.
